White Chocolate Bread Pudding
Ingredients 2 loaves country white bread 1 cup melted butter 24 eggs 4 cups sugar 2 tbl cinnamon 2 tsp vanilla 8 cups milk 2 cups grated white chocolate Directions Cube Bread into 1/2 inch squares, toss in melted butter and toast until light golden brown. Mix milk, sugar, cinnamon and vanilla in saucepan. Place on stove and scald. Beat all eggs together in bowl. Temper eggs with scalded milk
Feta Potato Salad
Ingredients 5 lbs red bliss potatoes 1/2 lb feta cheese 1 cup apple cider vinegar 1 1/2 cups mayonnaise 1 1/2 cups sour cream 3/8 cup chives (finely sliced) to taste salt & pepper Directions Boil potatoes in seasoned water. Cool completely (can be left overnight in the refrigerator). ½ the potatoes and ¼ inch slice them. Toss in the vinegar. Add all other ingredients. Season with salt & pepper.

**Makes 12 burgers. Ingredients: 1 gal. Blackberries (frozen) 4 cups Red Wine Vinegar 4 cups water 6 cups Brown Sugar 2 tsp.. Ground Cloves 2 tsp. Ground Ginger 4 tsp. Cinnamon 1 tsp. Cayenne pepper to taste Salt 1 # butter Combine all but butter, boil until reduced by ½ or like a Syrup. Burr Mix and Strain. Whisk in butter while hot. Season to taste with Salt.
Apple Glazed Salmon for Two
2 each- Salmon portions 1 each- Apple (Granny Smith) Peeled, Sliced Thinly 6 ounces- Apple Juice 4 Tbsp. Butter to taste Salt & Pepper Method: Season Salmon and put in a hot pan with a little oil. Sear and remove to a plate. Add apple slices and apple juice, reduce by half, and add butter. Allow to become a sauce (be careful not to over reduce), pour over salmon. Serve
