Ingredients
2 loaves country white bread
1 cup melted butter
24 eggs
4 cups sugar
2 tbl cinnamon
2 tsp vanilla
8 cups milk
2 cups grated white chocolate
Directions
Cube Bread into 1/2 inch squares, toss in melted butter and toast until light golden brown. Mix milk, sugar, cinnamon and vanilla in saucepan. Place on stove and scald. Beat all eggs together in bowl. Temper eggs with scalded milk mixture. Add eggs to milk and whisk thoroughly. Add white chocolate and whisk until melted. Strain through a chinois.
Spray ramekins well with pan spray and place them in a 2 inch hotel pan. Fill each ramekin halfway with bread. Then pour mix over the bread until ramekin is almost full. Let them sit for 15 minutes and occasionally push the bread down into the mix. Fill hotel pan with water half way up the ramekins. Bake at 350 for 45 minutes or until set.
