Recipe: Gluten-Free Flour and Pie Dough

Our co-owner Joe Scully has to use gluten-free flour, so this recipe has become a staple for him.

Gluten-Free Flour



Ingredients
:
Using a kitchen scale…
24 Ounces White Rice Flour
7 1/2 Ounces Brown Rice Flour
7 Ounces Potato Starch (flour)
3 Ounces Tapioca Starch
3/4 Ounce Nonfat Milk Powder

Method
:Whisk all ingredients together.


 

Double-Crust Gluten-Free Pie Dough

The pie dough recipe here, understandably, requires a bit more care than a crust made with regular all-purpose flour, but it will take an egg wash pretty nicely and gets a nice brown in the oven.


Ingredients:
6 TBSP  Ice Water
3 TBSP  Sour Cream
1 TBSP  Rice Wine Vinegar
13 Ounces Gluten-Free Flour (See above recipe)
1 TBSP  Sugar
1 tsp  Salt
1/2 tsp  Xanthan Gum
16 TBSP Unsalted Butter: Cut into 1/4 inch pieces and freeze for 10-15 minutes.


Method
:

Whisk flour, sugar, salt, and xantham gum together in a bowl.

Cut cold butter into flour mixture with a food processor or mixer until it resembles rough sand.

Mix liquid ingredients in another bowl and slowly mix into butter-flour mixture with a stiff wooden spoon or mixer.

Chill until ready to use.
