Double-Crust Gluten-Free Pie Dough
The pie dough recipe here, understandably, requires a bit more care than a crust made with regular all-purpose flour, but it will take an egg wash pretty nicely and gets a nice brown in the oven.

Whisk flour, sugar, salt, and xantham gum together in a bowl.
Cut cold butter into flour mixture with a food processor or mixer until it resembles rough sand.
Mix liquid ingredients in another bowl and slowly mix into butter-flour mixture with a stiff wooden spoon or mixer.
Chill until ready to use.
