Pickled tomatoes can be served as a side item or make a nice topping for burgers and sandwiches in the winter when ripe tomatoes are not in season.
3c Diced Pickled Green Tomatoes
¼c Diced Red Peppers
¼c Diced Red Onions
2 Diced Jalapenos
¾c Apple Cider Vinegar
¼c Lime Juice
2T Olive Oil
t.t. Salt and Pepper Mix
Dice all the vegetables and place in mixing bowl. Add in the sugar, salt, pepper, vinegar, lime juice and olive oil. Toss together well and let sit refrigerated until flavors are incorporated well.
Pickled green tomatoes:
Green Tomatoes 15 each (sliced ¼” thick)
1t Dry Mustard
2 stalks (sliced) Celery
2 each (sliced) Jalapeno Peppers
1 each (sliced) Yellow Onion (medium)
1c Salt and pepper Mix
3T Garlic, minced
2T Celery seed
Slice tomatoes. Boil ingredients, pour over sliced tomatoes and bring all back to a simmer. Cool immediately.
