Macadamia Nut Pesto
Method:
Puree macadamia nuts, garlic and lime juice in food processor. Add in cilantro and seasoning and then drizzle in oil until you have a pesto consistency.
Grilled Pineapple Salsa
Method:
Grill pineapple slabs until slightly charred, caramelizing the natural sugars. Dice pineapple and all of the other vegetables. Mix together in bowl with the rest of the ingredients. Check seasoning and adjust as needed.
