Macadamia Nut Pesto Grilled Mahi-Mahi with Grilled Pineapple Salsa

Macadamia Nut Pesto

  • 4bch Cilantro
  • 3/4c Macadamia Nuts
  • 1/2c Lime Juice
  • 2T Garlic, Chopped
  • 2c Vegetable Oil
  • 3T Sugar
  • t.t. Salt and pepper mix

Method:
Puree macadamia nuts, garlic and lime juice in food processor. Add in cilantro and seasoning and then drizzle in oil until you have a pesto consistency.

Grilled Pineapple Salsa

  • 1 Pineapple, peeled and sliced into 1/4 inch slabs removing core
  • 1 Red Bell Pepper
  • ½ Red Onion
  • 4 Jalapenos
  • 1bch Cilantro, Chopped
  • 1/4c Lime Juice
  • 3T Sweet Chili Sauce
  • 2t Cumin
  • 2t Chili Powder
  • 2T Olive Oil
  • t.t. Salt and Pepper Mix

Method:

Grill pineapple slabs until slightly charred, caramelizing the natural sugars. Dice pineapple and all of the other vegetables. Mix together in bowl with the rest of the ingredients. Check seasoning and adjust as needed.
