Humans of Corner Kitchen – Vanessa Salomo

Humans of Corner Kitchen is a continuing blog piece we run each month about a staff member in our restaurant.

Hi, my name is Vanessa Salomo and I am the Director of Business Development with Westmoreland & Scully (the parent/admin arm for the restaurants)

How long have you worked for Corner Kitchen and Chestnut (also known as Westmoreland & Scully)?
2.5 years.

What’s the best meal you’ve had at Corner Kitchen?
Their fish is always perfectly cooked and seasoned. Halibut, Grouper and Snapper are my favourites.

What kitchen tool could you not live without?
It would probably have to be a knife; any type of knife. If I’m hungry and want a snack, a knife can slice me a piece of cheese, butter my toast and slice veg for a meal.

If you could only have one meal for the rest of your life, what would it be?
I’m going to give you two 🙂
One
: My husband makes the most amazing beef short ribs.
Two:  My mother, who is Dutch, makes a meal called draadjesvlees, meaning “thready meat”.This old-fashioned Dutch beef and onion stew is slowly braised in butter, stock and spices until the meat actually falls apart into threads. Over potatoes and her amazing salad, I can drink the au jus. Yum!

What’s the worst meal you’ve ever had?
I consider myself incredibly fortunate around food. I was born and raised (until 14) on the island of Malta. It was like living in a second world country and I mean that in a good way. We did not have any fast food restaurants until I was 10 – McDonalds, etc. did not show up until the 80’s. Mama bought the veg from the lorry every Tuesday and Thursday; the meat from a local butcher; the fish from the fish monger every Saturday morning and the rest from little ‘corner’ shops. Food was cooked every night. And, we had dinner together, every night, around the table. Fast food was a no-no. Mama just did not allow it. Papa was a bit more slack about that rule…
Fresh home-cooked food is incredibly important in my life, especially now that I have a 6-month old.
So back to the original question, I have never had a meal so bad that I could not eat it but it may be because I stay away from certain foods that I know are not “good” for me.

What’s your favorite food movie? (example, Julie and Julia)
Well….the funniest food movie I have ever seen, and by the way it’s highly inappropriate, is Sausage Party.

What is the funniest thing that has happened to you recently?
I have a 6 month old so when she giggles or laughs or does something (I mean anything, really), it just makes me laugh out loud. I also have a very funny husband who is goofy and silly. He makes me laugh daily.

What’s the last thing you watched on TV and why did you choose to watch it?
Luke Cage. I’m a Marvel fan. TV and movies are a way for me to check out from my day-to-day routine. I don’t do it often but when I do, I enjoy it.

Corner Kitchen is proud to be part of Asheville's vibrant food scene and...don't forget that parking is free in the village (and very abundant during dinner service)!

Hurricane Helene has devastated many parts of our beautiful city of Asheville including Historic Biltmore Village. We will have to rebuild Corner Kitchen and that will take at least 4-6 months. For the latest information, please visit our social media sites.
