Chef Josh Weeks is General Manager & Executive Chef for Corner Kitchen, and is also part owner of Corner Kitchen Catering. Josh has worked at Corner Kitchen for 11 years. He learned his craft growing up in Eastern NC, getting his start at the age of 15 in a pizza joint. Josh knew then, that the chaos of the kitchen was the place for him.
“My number one favorite food is sweet potato. I love anything sweet potato. My favorite thing to cook for myself, though, is grilled fish. I like fish on the grill with tropical sauces….”
At this point another chef shouts to ask what Josh’s answer to the question of his favorite foods had been.
In the kitchen the chefs are always talking about food. What new place they have tried out or the latest dish from a favorite dive. They often go back and forth about new ideas or techniques they have read about or an interesting recipe shared with them. They endlessly sample each other’s dishes to make sure the flavor is just right. So it is not unusual that the topic of favorite dishes peaks another chef’s interest in the conversation. Now everyone is saying their go to dishes at home. Tacos, eggs, grilled meats of varying styles and methods. So Josh expands on his stand, “I like fish with rice and sauces. Like a Coast Rican style dish.”
When Josh is not in the kitchen he loves to spend his vacation time enjoying winter sports. Anything outside in the snow, he has probably tried it. Music and his guitar provide more creative outlets for his time away from the kitchen.
